Get a Nikon D40 or D60.
What you require are various kinds of lens for your purposes and with an inexpensive DSLR body, you can invest your money into glass.
I use a Nikon D80, D200 and a D300. All are great Cameras. The price range you are looking for I would go for a D60 or a D80. Costco has a great price on a D90. That is a great camera. Have fun. As for Canon, I don’t know. I have never shot a Canon. From what I have been told they are Great Cameras.
The body is not nearly as important as the glass, and at this point Canon rules that department. With such a low budget you should probably go with a refurb XTi (body only) and just a couple decent prime lenses.
Totally disagree about canon glass.
I shoot semi pro with Olympus glass and love it.
They provide the better kit lens, but their higher end stuff is $$$.
Low light is not good with olympus.
Try the E520 from Olympus.
Your price range is low though.
I just rented (and will buy) a 2000.00 lens. Ugh!
I suggest looking at the Sony A300 with the 18-70mm lens. I know this is heresy (failing to worship at the Nikon/Canon altar) but I simply believe that for the money Sony offers more.
1) Sony has their version of Image Stabilization (IS) in the camera body. Any lens you use will thus have that benefit. Nikon and Canon have their versions of IS in the lens so you get to pay for it with every lens. So with the A300 if you buy a 20 year old Minolta Maxxum 300mm AF lens it will be stabilized.
2) The A300 has an in-camera focusing motor so the 20 year old Maxxum 300mm AF lens will auto focus. Some Canon and Nikon models do not have an in-camera focusing motor so you have to buy lenses that have a motor. Again, you get to pay for it with every lens.
3) The A300 has Live View that works with the auto focus. This can be a useful feature in many situations. Would you like to take really candid street pictures? Just flip the screen up and let the camera dangle from its neck strap. Look down and you can compose, check focus and shoot. Your subject will never know you took their picture. In a crowd and need to hold the camera over your head to get a picture? Flip the screen down and you can compose and shoot.
Have I mentioned the fact that every Minolta Maxxum AF lens made since 1985 is compatible with the Sony DSLR line?
So take a look at the Sony A300.
They’re ALL good cameras. What’s “best” for you – only you can answer. I highly suggest going to your local camera store and holding & operating all of the models in your budget. Go with what feels best in your hands.
+1 to the Sony a300/a350 suggestion – but dump the cheezy kit lenses for something more substantial.

nikon d60
easy to use
not to pricy
reliable
excellent pic quality
Edwin’s response is right on especially with Sony’s quality image stabilization built-into-the-body rather than image stabilized auxiliary lenses which often are very costly.
Good luck!
